    Rheological Properties for the Gel Formed by Degraded Xanthan and Konjak

    • Different gel systems were prepared by mixing degraded xathan and konjak in certain conditions.The impacts on rheological properties of the gel systems of influencing factors such as mixing ratio,total gum concentration,mixing time and ionic strength were studied.The constitutive equations of the gel systems were also investigated.The results show that the gel systems possess shear thinning property,the non-linear co-rotational Jeffreys model can be applied to describe the viscosity curves of gel systems correctly,the calculated values are in good agreement with the experimental data.
