    Production of Fructooligosaccharides by Microbial Enzyme System

    • It is available to prepare standard 1kestose easily. The intracellular and extracellular activities of the strain 6.222 (isolated from soil and identified as moulds) were investigated. The optimum enzymatic reaction conditions of it were as follows: pH6.0, 50, 60min. The optimal initial concentration of sucrose in enzymatic reaction is 250g/L. The stability of enzymatic solution is excellent.
