    Rheological Properties of Xanthan Gum Solutions

    • Rheological properties of xanthan gum solutions with concentration range of 1.0 g/L to 40.0 g/L are investigated under 303.15 K to 343.15 K. The results showed that xanthan gum solution behaved like pseudoplastic fluid and the relationship between its viscosity and shear rate could be described by the power-law model. The Arrhenius equation could only fit the viscosity and temperature data of 2.0 g/L xanthan gum solution well. The concentration of xanthan gum solutions had little influence on their linear viscoelastic range. Storage modulus G′ was much higher than loss modulus G″ for a given xanthan gum solution, which demonstrated the existence of gel-like structure in xanthan gum solutions.
