Abstract:
Extraction condition and physicochemical property of red pigment in perilla were both studied in this paper. The extracting media used for the extractions include water, acidified water ethanol solution and mixture of ethanol and acidified water at different volume ratios. XAD 7 macroporous resin column chromatography was employed for further purification and concentration of pigment samples. High yields of pigment (175.0 mg/L) could be obtained with the chromaticity 54.03 and hue angle 26.63°, when the extracting condition was mixture of ethanol and acetic acid (V(CH3COOH)∶V(C2H5OH)∶V(H2O)=6∶40∶54) for 6 h. On the basis of stability test, the stability of anthocyanin was best at lower temperature(-18 ℃) in dark and without air.
