    Super-fine Mechanism of the High-pressure Homogenizer

    • 摘要: 通过豆乳均质实验和理论分析研究了高压均质机中的液力剪切应力和压力突降引起的拉应力,估计了它们的数值量级。指出外部压力突降使低弹性模量物料颗料产生的拉应力可与液力剪切应力相当,也是破碎颗粒的重要因素。

       

      Abstract: The shear stress caused by flowing liquid and the tensive stress caused by the rapid decrease in pressure in high-pressure homogenizers have been studied through soymilk homogenizing experiments, and their orders of magnitude have been estimated. It is shown that in those grains of low Young's modulus, the tensive stress resulted from rapid decrease in pressure may be as significant as the shear stress is, and they both play important roles in the homogenizing process.
